This exceptional whiskey, finished in Appleton Rum casks, pays homage to Ireland's rich distilling heritage while delivering a contemporary tasting experience.
Old Baile, meaning "Old Town" in Irish, embodies the spirit of Carrickmacross, where the historic flour mill has stood for generations. This new whiskey is crafted with authenticity and designed for today's discerning drinker, standing as a testament to quality without compromise and tradition without limitations.
Old Baile is triple distilled in traditional copper pot stills and aged in American ex-bourbon barrels before its unique finishing in rum casks. The result is a smooth, complex profile that delights the senses with layers of vanilla, caramel, and toasted oak, complemented by hints of tropical spice and dark fruit from the rum influence. Enhanced by naturally filtered limestone spring water, each sip offers an exceptionally clean and balanced whiskey that bridges Ireland's past with its future.
